Orange Granita

A refreshing and light dessert.

7 oranges - juiced approx 3 cups

1/2 cup sugar

1 pomegranate

small bunch of mint


  1. Squeeze 6 oranges which should be approx. 3 cups of juice. Leave 1 orange to the side for later. 
  2. Over a high heat, simmer 1/4 cup orange juice and 1/2 cup sugar in a small saucepan, stirring until sugar dissolves. 
  3. Pour the mixture to a shallow container or tray and add remaining orange juice.
  4. Once cool, cover loosely with plastic wrap and transfer to the freezer. 
  5. As the granita freezes, scrape around the sides with a fork every 30 minutes to break up the crystals. This should take between 2.5-3 hours total depending on your freezer. You're aiming for a an icy and slushy texture.  
  6. Cover with plastic wrap and keep in freezer until ready to serve.
  7. Serve in a glass and top with fresh mint leaves, orange segments and pomegranate seeds.
